steak asada

ingredients

  • 1 skirt, flank, or sirloin steak
  • juice of 1–2 limes
  • 1–2 tablespoons olive oil
  • 1 tablespoon coconut aminos (optional)
  • 2 cloves garlic, grated
  • 1–2 tablespoons grated white onion
  • salt and black pepper, to taste
  • tiny pinch of dried oregano

instructions

pour in a dish, combine lime juice, olive oil, coconut aminos (if using), grated garlic, grated white onion, salt, black pepper, and oregano. the steak, turning to coat. marinate for 20 to 45 minutes, but no longer than 1 hour to retain the steak's natural flavor. heat a cast iron skillet over high heat. remove the steak from the marinade, letting excess drip off. sear the steak in the hot skillet until deeply browned on both sides and cooked to your desired level of doneness. let the steak rest for a few minutes, then slice against the grain. immediately for optimal flavor and texture.
