sesame-crusted ahi tuna

ingredients
- •1 sushi-grade ahi tuna steak (about 1 inch thick), as fresh as possible
- •1–2 tablespoons tamari
- •salt and freshly ground black pepper
- •garlic powder
- •for the sesame seed crust:
- •mix of white and black sesame seeds
- •poppy seeds
- •everything seasoning
- •neutral high-heat oil, such as algae oil or olive oil
instructions
marinate the tuna in tamari for about 10 minutes, flipping halfway to ensure even coating. pat the tuna dry thoroughly to ensure a good crust. lightly season the tuna with salt, pepper, and a dusting of garlic powder. press the tuna into the sesame seed mixture on all sides to form a full crust. a heavy-bottomed pan over high heat and add a thin layer of oil. let the oil heat until it's shimmering and nearly smoking. sear the tuna for 45–60 seconds per side, pressing gently with tongs if needed, until a deeply golden crust forms. sear all edges for just a few seconds each. remove from the pan and let the tuna rest for 1 minute. slice against the grain with a sharp knife.
