ginger-maple chicken

ingredients
- •1 lb chicken breast, thinly sliced or cubed
- •1 tablespoon maple syrup
- •1 tablespoon lemon juice
- •1 teaspoon fresh rosemary, chopped
- •1 teaspoon fresh thyme, chopped
- •1 teaspoon ginger juice (or ½ teaspoon grated fresh ginger)
- •2 cloves garlic, minced
- •1 tablespoon olive oil, plus more for cooking
- •salt and pepper, to taste
instructions
in a bowl or resealable bag, combine the chicken, maple syrup, lemon juice, rosemary, thyme, ginger, garlic, olive oil, salt, and pepper. mix well to coat the chicken evenly. marinate for at least 30 minutes, or up to 2 hours for deeper flavor. heat a little olive oil in a skillet over medium heat. add the marinated chicken and cook until golden and cooked through, about 5–7 minutes per side. remove from heat and let rest for a few minutes. slice thinly if desired, and serve.
