cucumber–smoked salmon rosettes

ingredients

  • 2–3 organic english cucumbers
  • 6–8 oz wild-caught smoked salmon
  • ½ cup organic ricotta (or cream cheese)
  • lemon zest
  • dill sprigs
  • sea salt

instructions

slice cucumbers into ½-inch rounds. dab each slice dry (important for salmon sticking). spread a tiny smear of ricotta on each. roll small ribbons of salmon into loose roses and place on top. finish with lemon zest, micro dill, and a salt flake.
