cucumber–smoked salmon rosettes

ingredients
- •2–3 organic english cucumbers
- •6–8 oz wild-caught smoked salmon
- •½ cup organic ricotta (or cream cheese)
- •lemon zest
- •dill sprigs
- •sea salt
instructions
slice cucumbers into ½-inch rounds. dab each slice dry (important for salmon sticking). spread a tiny smear of ricotta on each. roll small ribbons of salmon into loose roses and place on top. finish with lemon zest, micro dill, and a salt flake.
