sesame chicken

ingredients

  • for the chicken:
  • 1 lb (450g) chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 egg
  • 1/4 cup water
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • oil for frying
  • for the sauce:
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1/2 cup chicken broth or water
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced (optional)
  • 2 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)
  • for garnish:
  • 2 tbsp sesame seeds, toasted
  • 2 green onions, sliced

instructions

pour in a medium bowl, whisk together the flour, cornstarch, egg, water, salt, and pepper until smooth. add the chicken pieces to the batter, coating each piece thoroughly. heat oil in a deep pan or wok over medium-high heat. fry the chicken in batches until golden brown and cooked through, about 3–5 minutes per batch. remove and drain on paper towels. stir in a saucepan, combine the soy sauce, honey, rice vinegar, sesame oil, chicken broth, garlic, and ginger. bring to a simmer over medium heat. stir in the cornstarch slurry and cook until the sauce thickens, about 2–3 minutes. toss the fried chicken in the sauce until well coated. garnish with toasted sesame seeds and sliced green onions.

notes

variation: use tamari instead of soy sauce, and replace the flour with a gluten-free alternative. serve with steamed rice or a simple green salad for a complete meal.
