ingredients

  • 1 large egg
  • ¼ cup flour (gf is fine)
  • ½ cup liquid (water or milk substitute)
  • ¼ tsp salt
  • butter or olive oil for the pan

instructions

make the batter: whisk egg and salt. whisk in flour until smooth. slowly add liquid until the batter is very thin (like heavy cream). rest 5–10 minutes if you can (helps texture). cook the crepes: heat a nonstick pan over medium. add a small knob of butter. pour ~¼ cup batter, swirl immediately. cook ~45–60 sec until edges lift. flip, cook 20–30 sec. stack on a plate, cover loosely.
