whipped tuna

ingredients

  • 8–10 oz high-quality yellowfin tuna fillets (raw or lightly seared + cooled)
  • 1 small cucumber, finely diced
  • 3 tbsp heavy cream (or 2 tbsp mayo for shortcut)
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1–2 tsp apple cider vinegar
  • 1 tbsp olive oil
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • salt + black pepper, to taste

instructions

prep the tuna if raw, finely mince into small cubes for a tartare vibe. if seared, let it cool, then flake gently. whip the cream in a small bowl, whip the heavy cream with a pinch of salt until soft peaks form. (if using mayo, skip this step.) the dressing stir in dijon, honey, acv, olive oil, onion powder, garlic powder, salt, and pepper. assemble fold in the tuna and diced cucumber. taste and adjust with more acv for lift or honey for balance. spoon over seed crackers, crisp rice paper, cucumbers, or sourdough. finish with black pepper and olive oil.
