sydney's guacamole with pomegranate

serves 4 as an appetizersides

ingredients

  • 2 ripe avocados
  • 1/4 cup pomegranate seeds
  • 2 tablespoons finely minced red onion
  • 2 tablespoons chopped cilantro
  • 1 tablespoon chopped mint
  • 1 teaspoon capers (optional, for a salty umami kick)
  • juice of 1 lime
  • salt, to taste

instructions

halve and pit the avocados, then scoop the flesh into a bowl. the lime juice and salt to the avocados, mashing gently until just combined, leaving some chunks for texture. fold in the pomegranate seeds, red onion, cilantro, mint, and capers, mixing gently to keep the pomegranate seeds intact. taste and adjust seasoning with more salt or lime juice, if needed.
