garlic-herb beans

ingredients

  • 1 tablespoon olive oil or butter
  • 1 clove garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1 can (15 ounces) northern beans, pinto beans, or black beans, drained and rinsed
  • 1 teaspoon maple syrup
  • pinch of salt
  • a few drops of lemon juice

instructions

warm the olive oil or butter in a small pan over medium heat. the minced garlic and fresh thyme, cooking until fragrant, about 1 minute. pour in the drained beans, maple syrup, and a pinch of salt. cook, stirring occasionally, for 5–6 minutes, until the beans are glossy and well-coated. finish with a few drops of lemon juice, stirring to combine. warm.
