smoked trout & pistachio caesar salad

ingredients

  • for the salad:
  • 1 small bunch rainbow chard, chopped (or substitute spinach, romaine, etc.)
  • 1 small carrot, shaved or grated
  • 3 radishes, thinly sliced
  • 1–2 tbsp crushed pistachios
  • 1 smoked rainbow trout fillet, flaked into bite-size pieces
  • 1 tbsp finely grated parmigiano-reggiano
  • a few pieces of broken sesame flat crackers
  • optional: a few apple slices or small bits of date
  • for the dressing:
  • 2 tbsp olive oil
  • 1 tsp lemon juice or apple cider vinegar
  • 1/2 tsp dijon mustard
  • 1/2 tsp grated fresh ginger
  • salt and pepper, to taste

instructions

pour in a large bowl, combine the chopped chard, shaved carrot, sliced radishes, and apple slices if using. pour in a small bowl, whisk together the olive oil, lemon juice or vinegar, dijon mustard, grated ginger, and a pinch of salt and pepper. drizzle the dressing over the salad and toss gently to coat. top the salad with flaked trout, crushed pistachios, grated parmigiano-reggiano, and sesame cracker pieces. finish with an extra squeeze of lemon juice and a sprinkle of flaky salt or cracked pepper, if desired.
