smoked trout & pistachio caesar salad

ingredients
- for the salad:
- •1 small bunch rainbow chard, chopped (or substitute spinach, romaine, etc.)
- •1 small carrot, shaved or grated
- •3 radishes, thinly sliced
- •1–2 tbsp crushed pistachios
- •1 smoked rainbow trout fillet, flaked into bite-size pieces
- •1 tbsp finely grated parmigiano-reggiano
- •a few pieces of broken sesame flat crackers
- •optional: a few apple slices or small bits of date
- •for the dressing:
- •2 tbsp olive oil
- •1 tsp lemon juice or apple cider vinegar
- •1/2 tsp dijon mustard
- •1/2 tsp grated fresh ginger
- •salt and pepper, to taste
instructions
pour in a large bowl, combine the chopped chard, shaved carrot, sliced radishes, and apple slices if using. pour in a small bowl, whisk together the olive oil, lemon juice or vinegar, dijon mustard, grated ginger, and a pinch of salt and pepper. drizzle the dressing over the salad and toss gently to coat. top the salad with flaked trout, crushed pistachios, grated parmigiano-reggiano, and sesame cracker pieces. finish with an extra squeeze of lemon juice and a sprinkle of flaky salt or cracked pepper, if desired.
