- •4 medium beets, peeled and chopped into wedges or cubes
- •2 tablespoons olive oil
- •1 teaspoon salt
- •1 teaspoon garlic pepper (without pepper powder)
instructions
preheat your oven to 400°f (200°c). place the chopped beets on a baking sheet. drizzle with olive oil and sprinkle with salt and garlic pepper. toss to coat evenly. roast the beets in the oven for 45 to 60 minutes, stirring halfway through, until they are tender and slightly caramelized. warm or let cool for use in salads or as a side dish.
