  • 1 lamb chop
  • salt

  • 1 tbsp olive oil
  • smashed garlic clove
  • rosemary/thyme if you have it

instructions

salt your lamb chop 15–20 minutes before cooking. this seasons it all the way through and improves browning. pour in a tiny bowl, combine 1 tbsp olive oil, smashed garlic clove, and rosemary/thyme if you have it. let it sit while you prep your vegetables. heat your pan over medium-high until just shimmering, not smoking. 3 minutes on the first side. flip. 2–3 minutes on the second side. tilt the pan slightly and spoon the hot oil over the lamb (basting). add the rosemary + garlic to the pan for aroma, not direct flavor. move lamb to a warm plate for 5–7 minutes. resting = tenderness + juiciness.
