creamy herbed rice

ingredients

  • 1 cup white or brown rice
  • 1 ¾ cups water
  • ¼ cup whole milk, cream, or coconut milk
  • 1 teaspoon butter or olive oil
  • ½ teaspoon salt
  • a few sprigs of thyme
  • 1 teaspoon fresh rosemary leaves

instructions

rinse the rice under cold water until the water runs clear. in a medium saucepan, combine the rice, water, and salt. bring to a boil over medium-high heat. reduce the heat to low, cover, and simmer for 15–20 minutes, or until the rice is tender and the water is absorbed. in the last 5 minutes of cooking, stir in the milk or cream, thyme sprigs, and rosemary leaves. remove the saucepan from heat, add the butter or olive oil, and fluff the rice with a fork. let the rice rest, covered, for a few minutes to allow the flavors to meld and the texture to become lightly creamy.
