honey roasted carrots

  • 1 pound carrots, peeled and cut on a bias or left whole if slim
  • 2 tablespoons olive oil or algae oil
  • salt and freshly ground black pepper, to taste
  • 1–2 teaspoons honey, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • optional: a few sprigs of fresh rosemary, roughly chopped:

instructions

preheat your oven to 400°f (200°c). pour in a large bowl, toss the carrots with olive oil, salt, pepper, honey, garlic powder, and thyme until evenly coated. spread the carrots in a single layer on a parchment-lined baking sheet. roast in the oven for 20–25 minutes, flipping halfway through, until the carrots are tender and golden brown on the edges. for added brightness, consider drizzling with a touch more honey or a squeeze of lemon juice just before serving.
