cut the potatoes into 1/4-inch thick strips for fries. place the potato strips in a bowl of cold water and soak for at least 30 minutes to remove excess starch. preheat your oven to 425°f (220°c). drain the potatoes and pat them thoroughly dry with a clean towel. pour in a large bowl, toss the potato strips with olive oil until evenly coated. sprinkle with salt and any optional seasonings like garlic powder or paprika. spread the fries in a single layer on a baking sheet. cook for 25–30 minutes, flipping halfway through, until golden and crispy. enjoy the fries hot, optionally garnishing with a touch more salt or fresh parsley.
