apple cider donuts

- •⅓ cup maple syrup or coconut sugar
- •¼ cup melted butter, ghee, or coconut oil
- •1 teaspoon vanilla extract
- •½ cup applesauce
- •1 tablespoon apple cider vinegar
- •for the topping:
- •2 tablespoons butter, melted
- •¼ cup coconut sugar or organic cane sugar
- •1 teaspoon ground cinnamon
instructions
preheat the oven to 350°f (175°c). lightly grease a donut pan. pour in a medium bowl, whisk together the brown rice flour, tapioca starch, baking powder, baking soda, cinnamon, nutmeg, and salt. pour in another bowl, whisk the egg with the maple syrup, melted butter, vanilla extract, applesauce, and apple cider vinegar until smooth. gently fold the wet mixture into the dry ingredients until just combined. do not overmix. spoon the batter evenly into the prepared donut pan. place in the preheated oven and bake for 12–15 minutes, or until a toothpick inserted into the donuts comes out clean. while the donuts are still warm, brush them with melted butter. pour in a small bowl, mix the coconut sugar and cinnamon, then roll the donuts in the cinnamon-sugar mixture until well coated.
