purple deviled eggs with ricotta filling

- •12 pasture-raised eggs
- •2–3 organic beets
- •¼ cup organic mayo (avocado oil)
- •2–3 tbsp ricotta or cream cheese
- •1 tsp dijon (optional)
- •sea salt
- •paprika or smoked salt
instructions
hard boil eggs (10 min). cool + peel. sliced beets in water for 20 minutes make dye. cool. submerge peeled eggs in beet dye for 1–12 hours depending on color. halve eggs, remove yolks. mash yolks with mayo, ricotta, salt, and optional dijon. pipe or spoon the filling back in. dust with smoked salt or paprika.
