diner-style potatoes

- •1 medium russet potato, peeled
- •2 tablespoons grated onion
- •1 clove garlic, finely minced or grated
- •salt and black pepper, to taste
- •olive oil, for frying
- •freshly shredded cheese of your choice (or pre-shredded cheddar if you want the true diner experience), for topping
instructions
grate the potato using the large holes of a box grater. place the shreds in a bowl of cold water and swish to remove excess starch. allow to sit for 5–10 minutes. drain and rinse the potato shreds until the water runs clear. wrap them in a clean towel or cheesecloth and squeeze out all moisture. pour in a mixing bowl, combine the dried potato shreds with grated onion, minced garlic, and a pinch of salt and black pepper. a nonstick or cast iron skillet over medium-high heat. enough olive oil to generously coat the bottom of the pan. spread the potato mixture evenly in the pan, forming a thin layer no more than ½ inch thick. press down gently with a spatula to compact the potatoes. undisturbed for 5–7 minutes, until the bottom is deeply golden brown. carefully flip the potatoes in sections or all at once. sprinkle with freshly shredded cheese of your choice. continue cooking for another 5–7 minutes, until the potatoes are crispy and golden. adjust seasoning with additional salt and pepper if needed.
