preheat your oven to 400°f (200°c). line a small baking sheet with parchment paper or foil for easy cleanup. pour in a small bowl, combine the dijon mustard, olive oil (or butter), honey (if using), and minced garlic. well and taste for balance. pat the salmon fillets dry with paper towels, then place them skin-side down on the prepared baking sheet. season with salt and pepper. generously spread the dijon mixture over the tops and sides of the salmon fillets, ensuring a full coating. bake in the preheated oven for 10–12 minutes, or until the salmon flakes easily with a fork but remains juicy. aim for an internal temperature of 125–130°f. after removing from the oven, finish with a squeeze of lemon juice and a sprinkle of fresh herbs.

for a touch of crispness, broil the salmon for the last 1–2 minutes, keeping a close watch. high-quality dijon mustard, like maille or edmond fallot, will make a noticeable difference.
